
Spring has sprung, even if the weather doesn't reflect it, and the ladies have been hard at work. Our egg baskets runneth over! So...
THE RECIPE OF THE WEEK IS:
Matzoh Brei
This is Passover's answer to French toast, when all leavened bread is strictly forbidden. In my opinion, this is the best dish of Passover--one in which matzoh is actually tasty (well, there's matzoh ball soup, too). Serves 4.
4 sheets of matzoh
4 large Speckled Hen Farms eggs
pinch of salt
1/2 tsp vanilla
butter
Break matzoh sheets into small pieces (2" x 2") or smaller and place into medium mixing bowl. Sprinkle with water to make pieces damp. Beat four eggs with pinch of salt and vanilla and then mix into matzoh. Stir until all matzo pieces are well coated with egg. In a medium fry pan, melt 2 Tbs butter over medium heat and pour matzoh egg mixture. Cook, turning portions of the mixture periodically until starting to brown and egg is cooked thoroughly. Serve with additional butter and New York maple syrup.
